Method
1. Preheat the oven to 350°F (180°C). 2. In a mixing bowl, combine 2 cups of all-purpose flour, 1/2 cup of sugar, 2 teaspoons of baking powder and 1/2 teaspoon of salt. 3. In another mixing bowl, whisk together 1/4 cup of melted unsalted butter, 1 beaten egg and 1 cup of milk. 4. Gradually add the dry ingredients to the wet mixture and mix until well combined. 5. Fold in 1 cup of fresh blueberries. 6. Pour the batter into a greased 9x5 inch loaf pan. 7. In a separate mixing bowl, combine 1/4 cup of all-purpose flour, 1/4 cup of sugar and 1/4 cup of softened unsalted butter to make the crumb topping. 8. Mix until crumbly and sprinkle over the top of the bread batter. 9. Bake for 1 hour or until a toothpick inserted into the center of the bread comes out clean. 10. Allow the bread to cool for 10-15 minutes before slicing and serving.Notes
For best results, use fresh blueberries in this recipe. Frozen blueberries can be used, but they may bleed into the batter and turn it purple.
