- 1/2 cup of warm milk (110-115°F)
- 2 1/4 tsp of active dry yeast
- 1/4 cup of granulated sugar
- 1/2 cup of ube jam
- 1/4 cup of unsalted butter (softened)
- 1/2 tsp of salt
- 2 large eggs (room temperature)
- 3 1/2 - 4 cups of all-purpose flour
- 1/2 cup of grated cheddar cheese
- 1/2 cup of grated mozzarella cheese
- 1 egg yolk
- 1 tbsp of milk
Equipment
- Measuring cups and spoons
- Mixing bowls
- Stand mixer or hand mixer
- Dough hook attachment or wooden spoon
- Baking sheet
- Baking paper
Method
- In a mixing bowl, combine the warm milk and active dry yeast. Let it sit for 5 minutes until the mixture is foamy.
- Add granulated sugar, ube jam, softened unsalted butter, salt, and eggs to the mixture. Mix until well combined.
- Gradually add 3 1/2 - 4 cups of all-purpose flour to the mixture, one cup at a time, until the dough is soft and elastic.
- Knead the dough for 5-7 minutes until it forms a smooth ball. You can use a stand mixer with a dough hook attachment or knead it by hand on a floured surface.
- Lightly grease a mixing bowl with oil and place the dough ball inside. Cover the bowl with a damp towel and let it rise in a warm place for 60-90 minutes or until it has doubled in size.
- Punch down the dough to release any air bubbles. Using a rolling pin, roll the dough into a rectangle shape with a thickness of about 1/4 inch.
- Sprinkle the grated cheddar and mozzarella cheese on top of the dough, leaving a small border around the edges.
- Roll the dough tightly into a log shape, starting from the long end. Pinch the ends to seal the log and tuck them under the bread.
- Place the bread on a baking sheet lined with baking paper. Cover the bread with a damp towel and let it rise for another 30-45 minutes in a warm place.
- Preheat the oven to 350°F.
- In a small bowl, whisk the egg yolk and milk together. Brush the egg wash on top of the bread.
- Bake the bread for 25-30 minutes or until it is golden brown on top.
- Let the bread cool on a wire rack before slicing and serving.
Notes
Make sure to use warm milk for the yeast to activate properly. If the milk is too hot, it will kill the yeast, and if it's too cold, the yeast won't activate.Nutrition Info
